What’s for dinner?

Sometimes my best meals come out of having absolutely no idea what I am going to cook and looking around my garden and kitchen for inspiration.

Today as ground buffalo was thawing on my counter I thought, “What’s for dinner?  What on earth am I going to cook?”  Then I looked out and saw that my pineapple sage has been getting so big it is the size of a small bush.  Ok, meat and pineapple sage, what’s next?  I started to brown some small onions (green tops and all) in the frying pan with a big chunk of butter.  Add in the meat and sage.  I never cook ground meat without cumin so naturally that went into the pan.

I am big on creating meals full of nutrients and fat to carry those nutrients to the body and brain so why not add some coconut milk?  Hmm…curry always goes good with coconut milk.  Now for some salt.  Most times I use dulse (a type of seaweed)  instead of salt with meat.  Seaweed is so chock full of nutrients it is what the Irish brought in by the loads over their rocky earth to create fields of lush green next to the water.  Lastly I added about 3/4 cup of pasta sauce.

The end result?  AMAZING!  It is fresh and light even though it will be very filling for the body.

We poured it over quinoa and supper is served!

Here is the recipe with no exact amounts…just how I like to cook.  : )

Ground grass-fed buffalo (or ground beef)

butter

onions

cumin

pineapple sage

curry

dulse

coconut milk

tomato basil pasta sauce

quinoa

Now if only we hadn’t eaten all of the pineapple ice cream I made for lunch.  It would have been the perfect ending to this meal!
